One of the most tastiest, moreish, easiest but stickiest things to bake has to be gingerbread! I love it's dark, melting aromatic flavour and it is one my favourite things to have on a dark, rainy day like today with a steaming cup of tea. Here is how to make Nigella Lawson's gingerbread...
The recipe I follow is by Nigella Lawson from her book How to be a Domestic Goddess, available here from; amazon. Most of my fail safe baking recipes come from her book so I highly recommend it!
You'll need;
Dark Brown Sugar 125g
Butter 150g
Plain Flour 300g
Treacle 200g
Golden Syrup 200g
Fresh Ginger 2tsp (grated)
Cinnamon 1tsp
Baking Soda1stb
Warm water 2 tbsp
Eggs 2
Milk 250g
*wine for yourself is optional!*
Measuring out the syrup and treacle is the worst bit of making this. It can be pretty damn messy!
Lyles is the BEST for treacles and syrups!
Put the butter, cinnamon, ginger and sugar in a saucepan.
Add in the treacle and syrup and melt gently. Then mix in the eggs, milk, baking soda (melted in the 2tbsp of warm water). Poor this over the flour and mix. Pour into a lined baking tray at bake at 150 (uk fan oven) for around 3/4 hour.
When cool ice with a lemony icing.
